I saw this lovely recipe somewhere and I decided to share. Enjoy!
RECIPE; PINEAPPLE FRIED RICE

Ingredients
•2 chicken thighs (cooked, De-boned & chopped)
•1 cup rice (cooked & cooled)
•1 small white onion(chopped)
•1/2 cup chopped carrot & green pepper
•1 tablespoon minced ginger & garlic
•3 Tablespoons vegetable oil
•1/2 cup (diced sweet pineapple)
•2 eggs (lightly beaten)
•1 Tabespoon green/spring onions
•Mixed seasoning to taste (salt, maggi, black pepper)
•2 chicken thighs (cooked, De-boned & chopped)
•1 cup rice (cooked & cooled)
•1 small white onion(chopped)
•1/2 cup chopped carrot & green pepper
•1 tablespoon minced ginger & garlic
•3 Tablespoons vegetable oil
•1/2 cup (diced sweet pineapple)
•2 eggs (lightly beaten)
•1 Tabespoon green/spring onions
•Mixed seasoning to taste (salt, maggi, black pepper)
Method
•Preheat frying pan to medium heat
•Pour in oil, add garlic & ginger mixture with onions, stir while cooking for about 2mins
•Add carrot & green pepper (once tender, slide to the side), about 3mins
•Pour in eggs to empty side of pan, scramble till cooked then mix with onion, carrot & green pepper mixture, about 5mins
•Add cooled rice, mixed seasoning & chicken, stir fry till all is combined & heated, about 3 mins
•Add diced pineapple & spring onions and stir fry for about 2mins
•Serve immediately
