I saw this lovely recipe somewhere and I decided to share. Enjoy!



RECIPE; PINEAPPLE FRIED RICE
Yield: Serves 2
Prep Time: 10mins
Cook Time: 20mins
Total Time: 30mins
Ingredients
•2 chicken thighs (cooked, De-boned & chopped)
•1 cup rice (cooked & cooled)
•1 small white onion(chopped)
•1/2 cup chopped carrot & green pepper
•1 tablespoon minced ginger & garlic
•3 Tablespoons vegetable oil
•1/2 cup (diced sweet pineapple)
•2 eggs (lightly beaten)
•1 Tabespoon green/spring onions
•Mixed seasoning to taste (salt, maggi, black pepper)
Method
•Preheat frying pan to medium heat
•Pour in oil, add garlic & ginger mixture with onions, stir while cooking for about 2mins
•Add carrot & green pepper (once tender, slide to the side), about 3mins
•Pour in eggs to empty side of pan, scramble till cooked then mix with onion, carrot & green pepper mixture, about 5mins
•Add cooled rice, mixed seasoning & chicken, stir fry till all is combined & heated, about 3 mins
•Add diced pineapple & spring onions and stir fry for about 2mins
•Serve immediately 
Food Presentation
It just makes perfect sense to eat my pineapple fried rice from a pineapple…
•Cut pineapple in half
•Use a small knife to create a well in one half
•Remove the flesh of the fruit using a spoon

Information reaching Annie's blog from its sources reveals that a Final Year FUTO student attempted suicide yesterday being 22nd April, 2015. Sydney Prince, an undergraduate student of FUTO currently studying Materials and Metallurgical Engineering jumped into the Otamiri River inside the Campus Area in an attempt to end his Life. Former President Goodluck Jonathan has dismissed claims by respondents in a book written by the Chairman of the Editorial Board of ThisDay, Mr. Segun Adeniyi. Jonathan, who stated this in his twitter handle on Saturday, faulted claims by respondents in the book, “Against the Run of Play.” He said many of those that responded to issues surrounding the 2015 presidential election made distorted claims. He said, “I have just read Segun Adeniyi’s new book, ‘Against the Run of Play’ which has so far enjoyed tremendous reviews in the media.
